Caprese Salad

We have an abundance of home grown heirloom tomatoes, so I’ve been trying to think of different ways to eat them. We’ve done salsa, pasta sauce, wraps, etc. But nothing is more refreshing in the summer than a juicey heirloom tomato lightly drizzled with balsamic vinegar and olive oil, added to some mozzarella cheese and garden grown basil. Yum!
