Crockpot Chronicles – chicken tikka masala

We got very little sleep last night, the dreaded 9 month sleep regression. I knew I was not going to be in the mood or have the energy to make a decent dinner, so out came my trust crockpot. It is time to grocery shop but luckily I had chicken, tikka masala sauce, and couscous on hand.

This one was SUPER easy. I put chicken breasts, tikka masala sauce, and a little water in the crockpot and set it on low for 4 hours, then put on ‘keep warm’ for 4 hours. The chicken was falling apart, it was so easy to shred!

I also made some couscous to put the chicken over, which takes less than 5 minutes. It was a mashup of food, couscous, chicken tikka masala… I added feta cheese to mine because I needed a little tart flavor. My husband added parsley to his, so as you can see, it is customizable! I’m sure there are chefs rolling over and shaking their head, but it tasted good. AND because the chicken was so soft, our son got to join in on the fun and enjoyed a plate of the chicken tikka masala.

I wish I had another jar of tikka masala because it was a little bland. So, if you make it, make sure you get 2 jars. This is such a great easy meal to 1) introduce different flavors to your young ones and 2) ensure you get a meal on the table instead of ordering out.
